splendour tailored tours guide paul

Paul

After visiting Australia in 1987 Paul promised that one day he would return to the land down under and almost 30 years later (and a career in Sales and Marketing!) he is finally living the dream. His love of all things Australian and, in particular Sydney, is infectious and he has spent the last 8 years relishing his new home city. Paul loves learning all the amazing stories of new settlers, aboriginal history and the history of the post war immigration from Europe and sharing this knowledge with guests. His tours reflect his love of, and his gratitude to live in, this wonderful city. When he’s not touring Paul loves bush walking, tennis and (even at his age) gym and pilates – oh and walking Bailey, the most famous Bernese Mountain Dog in Sydney.

A Monday In The Hunter

By Food & Wine

Mondays are best for wine tasting in the Hunter Valley

I took a beautiful group of 3 from London to the Hunter Valley on Monday and they loved it! Early in the week is always the best to visit the Hunter wine region – it’s quite, all the tourists have gone home and the winery staff are in “Friday mode” as Friday is the new Monday for wine cellar staff.

It’s a big drive from Sydney so it’s best to stop half way up – we love Brooklyn for coffee brewed with Single O beans and freshly baked lamingtons. Perfect for lining the stomach before wine tasting.

For these guests I choose a combination of larger wineries, privately owned and family run. I wanted them to get a true sense of the Hunter Valley and my favorite part of the area is the small boutique wineries where you can almost taste the heart and soul of the wine maker in every drop.

Here is a top line itinerary I put together for this group on Monday:

9am  Pick up from Sydney hotel
10am  Coffee and freshly baked lamingtons in Brooklyn on the Hawkesbury River
12:15pm  Piggs Peake Winery for a behind the scenes winery tour and comprehensive tasting
1:15pm  Lunch at Bistro Molines
2:30pm  Visit Tulloch Wines for gourmet chocolate & fine wine masterclass
3:45pm  A final comprehensive tasting at picturesque Ivanhoe Wines
4:45pm  Depart the Hunter Valley
6:45pm  Return to Sydney hotel

Every experience is different as every pallet is unique. There are no two Hunter Valley experiences the same as all of our itineraries are tailored to you and your preferences for the day.

I highly recommend visiting the Hunter Valley if you haven’t been before – especially in Autumn and winter.

Get in touch and we’ll tailor the perfect day for you.
